I'll recommend the same strategy for defeating Ultimecia as I do for just about every difficult boss around. Have one character summoun Doomtrain (if you have time, have another summoun Cerberus as well). Doomtrain will cast Meltdown on Ultimecia allowing your hits to do max damage. Have one character cast Aura on Squall (or everyone if you've also summouned Cerberus) and then use a Holy War. Keep hitting her with physical attacks, recasting Aura when Holy War runs out and then using another Holy War.

Don't have Cerberus and don't have Holy War. I guess I could draw Cerberus from one of the bosses in her castle (I have a game save before entering the castle), but it took forever just to get through all those bosses anyway. I did happen to draw Eden from that last boss, though I'm not sure how much good that would be. The real problem is that two of my characters aren't developed at all (Zell and Irvine) and I don't even have them junctioned to any GFs (Squall has about 7 GFs junctioned). I'm thinking of just leaving the castle and building up those other characters, while maxing out all of my acquired GF abilities.
