I really liked Laguna, they seemed to put a lot of effort in to exploring the sort of person he was and really delving into his personality.

I'm going with Laguna for the same reasons as Ryder. He had a cool personality and going into the "dream state" to play as him and get to know the kind of guy he was was pretty interesting and kept me playing the game. He also had that awesome limit. Desperado I think, but it's been a while. =\

This is the one game where my favourite character always changes. Every time I play through I find myself using a different trio.

Currently, I'd have to say my fave is Quistis. She goes through a lot of events AND feelings that people quite often miss or forget. The fact she has a bad-ass weapon also helps. ;P

Seconding Ryder and Exodus. I have separate save files just to play through Laguna's scenarios. xD

Laguna and Irvine are my favorites, mainly because they provide some comedy. Can't stand serious characters in these games; they're so emo.
